All three options work fine with VR but I found mouse steering to be the best of the three for accuracy and modulation of steering input. It does limit you to digital input for throttle and brake but assists (abs, tc, stability) can help with this. Went into Assetto corsa general settings, and turned off GPU accelerated GUI menu or something similar. --> Nothing noticeable happened. Noticed that "steam overlay" was disabled for "Assetto corsa". Went into steam and enabled it.
